Spinach Lemon Pesto

Ingredients:

  • 1/2 c. NSA cashews- toasted for about 5 minutes in a skillet
  • 1 t. thyme
  • 1 t. oregano
  • small pinch red pepper flakes
  • 3-4 cloves roasted garlic
  • 2 oz fresh spinach leaves or 2 c. packed leaves
  • 5-6 T. Meyer Lemon olive oil

Directions:

Using a food processor, add the cashews, thyme, oregano, pepper flakes and garlic.  Process for 60 seconds until smooth.

Add the spinach and process for 45 seconds.

Finally, slowly pour the oil into the running processor and let run for 60 seconds.

Store in covered container in refrigerator. Can be used on pizza, chicken,, eggs or pasta dishes. So many ways to use this condiment.

Total sodium is 64mg sodium.
