Not Too Spicy Oven Roasted Chicken Fajitas

Ingredients

  • 2 – 1 lb bone- in chicken breasts, no sodium injected
  • 4 T. oil
  • 1 sweet green pepper
  • 2 onions
  • 3 sweet red peppers
  • 1 package Mrs Dash no salt Fajita Seasoning
  • 2 limes, cut in wedges
  • low sodium tortillas (homemade recipes on skipthesalt.com)
  • sour cream, optional

Directions

Heat oven to 400 degrees

Add a sheet of parchment to 2 large baking pans with sides.
Remove chicken from the bone (save bones for soups or broth)
Cut the chicken into finger like slices.
Slice the onions into wedges.
Slice the peppers into long slices.

Using a large bowl, add the first 6 ingredients to the bowl and toss well.
Pour out the chicken mix onto the baking sheet and spread evenly.
Place the baking sheets into the oven and roast for 15 minutes. Toss the mixture and roast another 10 minutes.

Warm the tortillas and place scoops of the mixture in the center, squeeze lime juice onto meat and fold over the top half of tortilla.

Add a dollop of sour cream, if desired.

Recipe makes 8 servings.
The chicken vegetable mixture for each is 83mg when using the exact ingredients as listed. You will have to add the sodium in each flour tortilla to this total.
