Colorful Fresh Veggie Pasta Salad

9 cups


  • 3 c. mini farfalle (bow tie pasta), cooked 8 minutes in unsalted water, drained and cooled
  • 1/2 medium zucchini, chopped
  • 1/2 yellow squash, chopped
  • 1/4 red onion, chopped
  • 5 mini peppers, use many colors, chopped
  • 1/2 green pepper, chopped
  • 8 cherry tomatoes, cut in wedges
  • 1/2 c. low sodium or no salt Italian dressing


Add pasta and veggies to bowl, pour on dressing,mix and chill.

Makes about 9 cups
