Zoodles with Avocado Alfredo Sauce

Ingredients:

  • 1 yellow zucchini (about 6-7 inches long)
  • 1 green zucchini ( about 6-7 inches long)

Avocado Alfredo Sauce:

  • 2 medium garlic cloves
  • 1/4 to 1/2 cup fresh basil leaves
  • 2 tbsp freshly squeezed lemon juice
  • 1 large or 2 smaller avocado, peeled & pitted, diced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp water
  • Chopped tomatoes for garnish (optional)
  • Basil leaves for garnish (optional)
  • Red Pepper flakes (optional)
  • Lemon zest (optional)

Directions:

1. Spiralize the zucchini and place on a plate that has been covered in paper toweling to absorb the excess moisture.  Set aside.

2. Place the garlic cloves and basil into a food processor…turn on and mince. Add the lemon juice, avocado pieces, olive oil and water. Pulse until all is smooth, scrape down sides and pulse again. If the sauce is too thick, add another tbsp of water.

3. Place 1/3 of the raw zoodles on a plate and microwave at full power for 30 seconds. Remove the plate from the microwave and top the zoodles with 1/3 of the avocado sauce. Return the plate to the microwave and heat for another 30 seconds.

4. Top the zoodles and avocado sauce with chopped tomatoes, extra basil leaves and red pepper flakes if desired.

5. Sprinkle lemon zest over the top of the zoodles and serve.

This dish m be eaten either hot or cold and it tastes delicious either way!

Makes 3 servings, each serving has about 280 calories, 24mg sodium and 17.1g carbohydrates with ingredients used.
