Turkey Vegetable Soup

4 – 5 Portions

Ingredients

  • 900 ml or 1 box Chicken broth NAS
  • ½ small onion (22g) finely diced
  • 2 cups frozen mixed vegetables (peas, corn, carrots, green beans)
  • 1 cup cooked spaghetti or other cooked pasta, cut in pieces
  • 4 oz turkey, cooked and diced
  • 1/8 tsp poultry seasoning NAS

Directions

Place all ingredients, except cooked pasta, into a large pot and bring to a boil.

Turn down heat and simmer until all the vegetables are tender and then add pasta. Continue to simmer until pasta is heated through.

Divide into portions…

4 portions will be about 188 calories and 110mg sodium /portion

5 portions will be about 150 calories and 88 mg sodium /portion
