Turkey Porcupine Meatballs

12 meatballs – Serves 4-6

Ingredients

Meatballs

  • 1 pound lean ground turkey
  • 1 large egg
  • 1/2 cup uncooked brown rice
  • 1 large clove garlic, minced
  • 1/4 yellow onion, minced
  • 1/4 cup water
  • 1/4 tsp pepper

Sauce

  • 1 large can (28 oz) no salt added crushed tomatoes
  • 1/2 yellow onion, diced
  • 1/4 tsp pepper, or to taste
  • 1/4 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/4 cup fresh parsley, chopped finely (1 tbsp dried)

Directions

1. Beat egg, uncooked brown rice, and other ingredients except for ground turkey in a large mixing bowl. Add the meat and mix until well combined.

2. Roll into meat into 12 meatballs. Make sure all the meatballs are roughly the same size so they cook evenly.

3. Sauté onion for sauce in a non-stick pan, remove and set aside.

4. Using the same pan, brown meatballs, draining the pan of fat if needed.

5. Add remaining sauce ingredients plus the onions (except for fresh parsley) to the pan and let simmer for 1.5 hours.

6. Keep adding water as the rice cooks and absorbs the sauce. When the rice is cooked al dente, the meatballs are ready.
