Tomato Vodka Cream Pasta Sauce

Ingredients

  • 28 oz canned whole or diced no salt added tomatoes or use fresh tomatoes
  • 1 tbsp extra virgin olive oil
  • 1/2 cup onion, minced
  • 1 tbsp no/low sodium tomato paste
  • 2 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 cup vodka (80 proof)
  • 1 cup whole milk

Directions

1. In a blender or food processor, puree half the canned tomatoes until smooth.

2..Chop the remaining tomatoes into ½ inch pieces, discarding the cores. If you want a spicier sauce add in a hot pepper to the blend.

3. In a large saucepan over medium heat, heat the olive oil.

4. Add the onions and tomato paste and cook until the onions are light golden, about 2 minutes. Stir occasionally.

5. Add the garlic and pepper flakes and cook for about 30 seconds.

6. Stir in the pureed and chopped tomatoes. Remove pan from heat and mix in the vodka.

7. Return the pan to medium heat and simmer, stirring often, until the alcohol flavor is cooked off, about 8 minutes.

8. Lower the heat if the simmering becomes too vigorous.

9. Stir in the milk and cook about 1 minute more until hot.

Whole recipe makes about 44 oz of sauce…975 calories, 153 mg sodium

Makes 11-1/2 cup (4 oz) servings each having 89 calories and 14mg sodium

This can be made much richer by using fat-free half & half or heavy cream but the calories and sodium go way up.
