Spicy Spanish Rice

Ingredients

  • 1 T. oil
  • 2 c. white rice, raw
  • 1 Walla Walla onion, diced
  • 1 Hatch chile, roasted, diced
  • 1/2 t. garlic, diced
  • 2 c. water
  • 2 T. Herb Ox no salt Chicken Bouillon
  • 1 10 oz can no salt Original Rotel
  • 1/2 t. no salt chili powder
  • 1/4 t. cumin

Directions

Saute the rice, onion, chile and garlic in a large pan to which you have added the oil Stir and let the onion get softened and the rice browned.

Add the water, bouillon, Rotel, chili powder and cumin. Bring to a boil, cover and put on simmer until the rice has absorbed all the water and is soft. This will take about 30 minutes or so.

This makes about 4 cups with a total of 46mg sodium.

8 servings of 1/2 cup, 6mg per serving.
