Ingredients

  • 1 cup onion, chopped
  • ½ cup bell pepper, chopped
  • 1 large garlic clove, chopped
  • 1 cup converted/parboiled white rice, uncooked
  • 1/4 teaspoon black pepper
  • 4 ounces canned no salt tomato paste
  • 1 cup low-sodium chicken or vegetable broth
  • 1 lb raw shrimp
  • 1/4 cup unsalted butter

Directions

1. Preheat oven to 350º F.

2. Chop onion, bell pepper and garlic. Peel shrimp.

3. In a large bowl combine all ingredients except butter.

4. Pour into a greased 9” x 9” baking dish and spread out evenly.

5. Slice butter and place over top of ingredients.

6. Cover with a lid or foil.

7. Bake for 1 hour and 15 minutes. Serve hot.
