Ingredients:
- 1 cup warm water (110° F/43° C)
- 2 1/2 tsp active dry yeast
- 3 tbsp white sugar
- 1/8 tsp kosher sea salt
- 3 tbsp olive oil
- 1/2 tsp ground thyme
- 1/2 tsp garlic powder
- 2 tsp crushed dried rosemary
- 3 cups all-purpose flour
Directions:
1. Pour the water into the pan of a bread machine, then sprinkle in the yeast and sugar. (This a method I’ve never tried before, but it does work.)
2. Let the mixture sit in the bread machine until a creamy foam forms on top of the water, about 10 minutes. Sprinkle in the salt, then add olive oil, thyme, garlic powder, rosemary, and flour.
3. Set the machine on dough cycle and start the machine.
4. When the dough cycle has completed, dump the dough out on a floured board and knead a few times.
5. Divide the dough into 10 equal balls. Use a lightly oiled round pan, place one ball in the middle and place the remaining dough balls around it. Cover with a clean dish towel, place in a warm spot and let rise until doubled, about 30 minutes.
6. Once the bread has risen, pre-heat oven to 375°F.
7. Remove dish towel from the baking pan and lightly brush the top of the bread with olive oil and sprinkle with some crushed rosemary.
8. Place pan on middle rack in oven and bake 25-30 minutes for a soft golden brown color.
9. Remove pan from oven and place on a wire rack to cool for 10 min before removing from the pan.
10. Serve warm or at room temperature with olive oil and a good quality balsamic vinegar for dipping or with unsalted garlic butter.
