Quick BBQ Chicken Sliders

Ingredients:

  • 4 King’s Hawaiian Dinner Rolls (80mg sodium each)
  • 4 oz. cooked, shredded chicken breast
  • 1/2 c. Copycat Sweet Baby Ray’s BBQ Sauce (recipe below)
  • 1 thin slice onion
  • 1 thin slice Kraft Swiss Cheese
  • Low sodium Bread and Butter Pickles (optional)

Directions:

Slice the rolls in 1/2.
In a saucepan, heat the chicken and the BBQ sauce until hot, stirring often.
Mound the bottom of each bun with 1/4 of the chicken.
Divide the cheese slice in 4 equal squares, then top each mound of chicken with one of the little cheese squares.
Microwave for 15-30 seconds to melt the cheese.
Top Swiss  with a bit of onion.
Place the top half of the bun on the cheese.

Makes 4 sliders

Total sodium is 483mg.  Each slider has 121mg sodium.

Copycat Sweet Baby Ray’s BBQ Sauce

Ingredients:

  • 1 1/4 cups low sodium ketchup
  • 1 cup dark brown sugar
  • 1/4 cup molasses
  • 1/4 cup pineapple juice
  • 1/4 cup water
  • 1 tablespoon hickory liquid smoke
  • 2 1/2 teaspoons ground mustard
  • 2 teaspoons paprika
  • 1/2 teaspoon garlic powder
  • pinch cayenne pepper
  • 1 teaspoon black pepper
  • 1 tablespoon corn starch dissolved in 1/8 cup cold water (optional)

Directions:

1.Whisk together all ingredients (except the corn starch in water) in a medium pot over medium heat. Bring to a boil, then reduce heat and simmer for 5 minutes, until sugar has dissolved. For a thicker sauce, add the corn starch and water mixture. Then simmer for up to 15 minutes, until desired thickness is reached. Keep in mind that it may thicken slightly more while cooling. Serve immediately or cover and store in the refrigerator.

2.Once cooled, you may portion and freeze the sauce. Then thaw in the fridge and use as needed.
(I just left out the salt in this recipe, and used loso ketchup))
