Ingredients

  • ½ cup Mazola oil
  • 1 cup sugar
  • ¼ tsp salt
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 3 ripe bananas, mashed

Directions

1. Beat eggs, sugar and oil together until creamy.

2. Add dry ingredients, then the mashed bananas.

3. Bake in two small loaf pans lined with wax paper for abt 45 minutes or until the centre is no longer gooey at 375° oven.

4. Tip loaves out of pans and let cool.

Rewritten for Low Sodium Muffins….oven 375° for 25 minutes

1/4 cup canola oil
1/4 cup unsweetened applesauce
1/2 cup no calorie Splenda
1/2 cup granulated sugar
2 large eggs
2 cups all purpose flour
2 tsp EnerG no sodium baking soda
3 medium ripe bananas, mashed

Make 14 rather flat muffins 161 calories each, 11 mg sodium
