Ingredients:

  • 1 can (540ml) Irresistibles No Salt Added 6 Bean Mix, drained *
  • 1/2 (82g) sweet red pepper, diced
  • 1/2 red onion (78g), diced
  • 2 stalks (76g) celery, diced
  • 1/2 cup low sodium Zesty Italian Salad Dressing (on website)

Directions:

1. Drain the canned beans and place them in a large bowl.

2. Dice the red pepper, red onion and celery, place in the bowl with the beans.

3. Make the low sodium Zesty Italian Salad Dressing, if it has not been made ahead of time. The recipe for the Zesty Italian Salad Dressing is on the website.

4. Pour the salad dressing over the beans and vegetables and mix until all the ingredients are coated.

5. Refrigerate for at least 4 hours before serving.

Makes 10 – 1/3 cup servings, each serving has 95 calories, 7mg sodium, 10.8g carbohydrates

*you can also use a mixture of dried beans that you have soaked, cooked and cooled
