Low Sodium Orange Teriyaki Chicken for 2

Ingredients

  • 4 skinless chicken drumsticks (400g)
  • Pepper for seasoning
  • 2 tsp olive oil

Sauce:

  • 1 tbsp garlic, minced
  • 1/4 cup orange juice (juice of one orange)
  • 2 tbsp liquid honey
  • 1 tbsp Kikkoman’s 47% less sodium Teriyaki sauce
  • 2 tbsp rice wine vinegar
  • 1 1/2 tbsp cornstarch
  • 1/4 tsp ground ginger
  • 1/8 tsp white pepper
  • zest of one orange
  • pinch of crushed red pepper flakes (optional)
  • Garnish with thinly-sliced green onions, toasted sesame seeds, orange zest

Directions

1. Season chicken generously with pepper.

2. Mix remaining ingredients for sauce in a bowl, whisk well and set aside. 2. Heat oil in a large frying pan over medium-high heat. Add chicken and sauté for 4-6 minutes, stirring occasionally, or until the chicken is browned and cooked through. (will depend on what thickness of chicken you are using)

3. Pour in the orange teriyaki sauce, and stir to combine. Let the sauce come to a boil, then boil for an additional minute or two until thickened.

4. Remove from heat and serve immediately over rice or noodles.

5. Garnish with green onions, sesame seeds and additional orange zest.

6. Serve with rice or noodles.
