Low Sodium Faux Sauerkraut

Ingredients

  • 1/2 to 1 head green cabbage, shredded (about 6 cups)
  • 1 tsp caraway seeds
  • 1 to 2 tsp dried dill weed
  • 1 1/2 cups cider vinegar
  • 1/4 tsp stone ground mustard
  • 1/2 cup of unsweetened apple juice
  • 1/3 cup of water

Directions:

In a large pot, add the shredded cabbage, apple juice, vinegar, water, dill weed, mustard, and caraway seeds and bring to a boil.

Cover, reduce heat and simmer for approximately 30 to 45 minutes, until the cabbage is tender.

Add a little water if the sauerkraut gets too dry. Remove from heat, let cool.

It does not taste quite the same as canned or jarred sauerkraut as it does not have the salt….it is a bit sweeter in taste.

To reheat, fry in a frying pan with a bit of bacon grease and some onion bits…watch that it does not burn!
