Low Sodium Chocolate Chip Cookies

Ingredients:

  • 1/2 c. no salt butter, cold
  • 1/2 c. white sugar
  • 1/2 c. brown sugar
  • 1 egg
  • 1 t. vanilla extract
  • 1 1/2 c. flour
  • 2 t. no salt baking soda- already doubled
  • 1 c. chocolate chips
  • 1 c. chopped walnuts

Directions:

In a large bowl or stand mixer, blend the butter and both sugars until smooth.

Add to the bowl the egg, vanilla and flour. Blend well.

Add the chocolate chips and nuts and mix well.

Line a cookie sheet with parchment paper. Using 2 T. measure (I used a 2 T. scoop- ice cream trype), and place the dough 2 inches apart. Press the mounds lightly.

Bake in 300 degree oven 20-25 minutes, checking for doneness. Remove from baking sheet and cool.

Recipes makes 20 cookies.

15mg sodium per cookie.

Total time about 1 hour, 20 minutes for mixing and baking.

  1. Love this recipe and it makes me happy that I can still bake chocolate chip cookies, since I’m on a sodium restriction on for the last month now. Been rough but it has happened with the recipes but wish recipe had its nutrition fasts on it other then that I love it.
