Ingredients:
- 1 1/2 lb boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 tbsp canola oil
- 4 tbsp sweet Hungarian paprika
- 2 tbsp onion powder
- 2 tsp no salt seasoning (21 Salute or similar)
- 1 tsp pepper
- 48 oz unsalted chicken broth (1500ml)
- 2 carrots, peeled and cut in half (7 in long)
- 2 celery ribs, cut in half (12 in long)
- 1 medium onion, sliced
- 1 medium tomato, quartered
- 1 cup fresh parsley, uncut
Gravy:
- 16 ounces sour cream
- 2 cups water
- 1/2 cup flour
Directions:
1. Place a large, heavy bottomed pot on the stove, add the 2 tbsp oil and heat over medium heat.
2. Put the 1/2 cup of flour on a shallow plate and lightly flour the chicken. Place the chicken pieces in the pot and brown them on all sides in the oil.
3. Add all the other ingredients to the pot, reduce the heat to medium low and cook for about an hour or until the chicken is cooked through. Remove the chicken pieces and set aside on a platter.
4. Carefully strain the broth through a colander into a large pot or bowl, discard the vegetables and return the broth to the original pot. Let the broth cool slightly so it won’t curdle the sour cream when it is added.
5. To make the gravy, mix the sour cream, water and flour together and mix until there are no lumps and it’s very smooth. Add a bit of the warm broth to the sour cream mix to temper it, then slowly pour the mixture into the warm broth, stirring as you pour. This will make a creamy, somewhat thickened gravy. Add a bit more flour or cornstarch slurry if you like a thicker gravy. Reheat over medium heat but do not boil as the gravy will curdle.
6. Add the chicken pieces back into the gravy and serve immediately over the noodles, dumplings or spaetzle. (The noodles, dumplings or spaetzle have NOT been calculated into nutrient values.)
