Low Sodium Bread & Butter Pickles

Ingredients

  • 4 cups cucumbers, sliced (small pickling cucumbers work best)
  • 2 onions, sliced
  • Cover and refrigerate
  • Put in Saucepan:
  • 1 1/4 cup cider vinegar
  • 1 1/4 cup sugar
  • 1/2 tsp turmeric
  • 1/2 tsp mustard seed
  • 1/4 tsp celery seed

Directions

Bring to boil and add cucumbers and onion.

Heat 2-3 minutes

Chill, and will keep in refrigerator for 1 month.

Optional: you can also make –a pickled veggie relish -add sliced carrots, peppers, cauliflower and onions to the boiled mixture.

  1. These pickles are absolutely delicious. The recipe is easy and quick. My husband doesn’t like sweet pickes is already eaten half the jar! Looks like I will be making these on a weekly basis!
