Ingredients
- 1 lb lean ground beef
- 2 cups frozen mixed vegetables
- 796 ml no salt added Diced Tomatoes with Herbs & Spices
- 4 cups low/no sodium beef broth
- 1/4 teaspoon pepper
- 3/4 cup uncooked elbow macaroni/rainbow fusilli or other small pasta
- 1 teaspoon crushed red peppers (optional)
- 1 tsp salt substitute (21 Salute or Kirkland’s seasoning)
- 1 tsp onion powder
- 1/2 tsp garlic powder
Directions
1. In a large saucepan, cook beef over medium heat until no longer pink; drain.
2. Stir in the mixed vegetables, tomatoes, broth and pepper.
3. Bring to a boil; add macaroni.
4. Reduce heat; cover and simmer for 8-10 minutes or until macaroni and vegetables are tender. Divide into 6 equal portions.
