Hamburger Soup

Ingredients

  • 1 lb lean ground beef or ground turkey (make into mini meatballs or do as crumbles)
  • 28 oz can diced no salt added tomatoes and green chilies (or no salt added Ro-Tel)
  • 16 oz. frozen mixed vegetables
  • 6-8 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • ½ tsp Mrs. Dash herb & garlic, add more if you want
  • 8 cups low sodium beef broth (2 boxes)
  • Freshly ground black pepper to taste

Directions

Brown meat on stove top and drain grease. Combine all ingredients, heat over low for about an hour or until all vegetables are cooked.

This can also be prepared for the crockpot. Brown the beef or turkey and combine all ingredients in crockpot and cook on low for 6-8 hours.

  1. I made this soup, but I’m wondering what the sodium is per serving as I can’t seem to find it listed. Could you help out with this please.

  2. I made this today for the first time and it wasn’t what I expected. very bland and too spicy. I’m so disappointed. just wanted to find a hearty soup that’s not loaded with salt and still tastes good…is that too much to ask. not a fan of the Mrs dash herb and garlic.
