Grilled veggie Salsa Wrap

Ingredients

  • 1 6 inch flour tortilla (or use your own homemade no salt tortillas for a much lower sodium count)
  • 1/4 c. grilled veggies ( onion, red pepper, green pepper, zucchini, and yellow squash are what I used), be sure to chop the veggies for easier eating
  • 2 T. shredded cheese, Cheddar is my choice here
  • 2 T. no salt Fire Roasted Tomato Salsa from Trader Joe’s or use  your own homemade salsa

Directions

Warm tortilla and veggies.

Spread veggies on 1/2 of the tortilla.

Top with most of the cheese and then sprinkle around most of the salsa.

Fold tortilla, and now add a bit of salsa and some cheese to the top.
Enjoy.

This is about 250 mg sodium, and I find one wrap filling. You might want to make two of these for your meal.

If you have some leftover grilled chicken or pork, thinly slice and add to veggies for a tasty option.
