Ingredients
- 2 Cups Flour
- 1 Cup Brown Sugar
- 1 Cup Grape-Nuts
- 1/4 Teaspoon All Spice
- 1/2 Teaspoon Nutmeg
- 1 Teaspoon Cinnamon
- 1 Teaspoon no sodium Baking Soda
- 1 Teaspoon no sodium Baking Powder
- 1/4 t. salt (optional, and there will be more mg sodium)
- 1 1/2 Cups Mashed Bananas
- 1 Teaspoon Vanilla
- 2 Eggs
- 1/3 Cup no salt Melted Butter
- 1/4 Cup Honey
Directions
Line a cupcake pan with cupcake liners and preheat your oven to 375 degrees.
In a large mixing bowl, combine your flour, brown sugar, baking powder, baking soda, salt, cinnamon, all spice, and nutmeg and mix well.In a separate mixing bowl, combine your mashed bananas, honey, eggs, butter, and vanilla and mix well.
Mix your wet ingredients into your dry ingredients.
Fold in your Grape Nuts cereal.
Fill cupcake liners 1/2 full, bake about 12-14 minutes.
