Ingredients

  • 5 c. rolled oats (dry oatmeal)
  • 1 c. pecans, chopped
  • 1 c. walnuts, chopped
  • 1 c. coconut, shredded
  • 1 1/2 c. sunflower seeds, unsalted
  • 1 c. pumpkin seeds, unsalted
  • 1 c. honey
  • 1/2 c. oil
  • 2 t. cinnamon
  • 1 c. dried cranberries
  • 1 c. raisins
  • 1 c. dates, chopped

Directions

Mix oats, nuts, coconut, and seeds.

Heat honey, oil, cinnamon and pour over oats, mixing well.

Pour into 13 x 9 pan and bake at 300 degrees for 45 minutes- stirring every 15 minutes. If making a double batch, add another 15 minutes of baking to the time.

Remove from oven and stir.

Wait about 20 mins and stir again. Keep stirring granola around to keep from getting clumps. When cool, add dried cranberries and raisins and dates and place in covered container.

1/2 c. per serving as cereal with milk or cream. Or use as a snack or topping for ice cream.
