Garlic Mashed Potatoes with Italian Sausage and Sauce

Ingredients

  • 2 large potatoes, cubed
  • no salt garlic butter
  • milk for mashing potatoes
  • 3 slices sweet onion, chopped
  • 2 Roma tomatoes, chopped
  • 3 colorful mini peppers chopped
  • 1 1/4 c. Trader Joes Marinara Sauce (no salt)
  • 2 Italian sausages, low sodium if you can find them, grilled and thinly sliced. Keep hot.
  • Parmesan cheese, optional

Directions

Cook potatoes in unsalted water. Drain and mash adding the butter and a bit of milk to make fluffy potatoes.

Saute the onions, tomatoes and peppers in a bit of oil. When tender, add marinara sauce.and heat well.

Put mashed potatoes on plate, top with sauce and then sausage. You may want to add a bit of Parmesan.
