Eggplant Pizza Style

Ingredients:

  • 1 eggplant, sliced in 1/2 inch slices- should make 7 slices
  • 1/2 c. Trader Joe’s No Salt Marinara
  • 3 oz fresh mozzarella cheese, chopped ( BelGioioso )
  • 1 Roma tomato, seeded and chopped
  • 1/2 t. dried oregano

Directions:

Preheat oven to 350 degrees.

Heat a skillet on medium to medium high. Place the slices of eggplant on the hot pan, cook for about 4 minutes until toasty, then flip over and cook another 4 minutes.

Place the slices on a baking sheet and top with the marinara equally divided between them, making sure the eggplant is covered to the edges.

Sprinkle the cheese  between all the slices, and top with bits of the tomato.

Bake for 10 minutes to melt the cheese.

Sprinkle the oregano on each of the slices.

Total sodium is 324mg.
