Ingredients

  • 1 tsp olive oil
  • 2 cloves garlic, minced
  • 28 oz can of tomatoes, no added salt (whole or diced)
  • 1 bay leaf
  • 1 tsp dried oregano
  • 2 tbsp fresh basil, chopped (or 1 tbsp dried)

Directions:

1. Put all the ingredients into a large pot …break up whole tomatoes with a fork.

2. Simmer for about 20 minutes until all the flavours have blended.

3. Remove bay leaf.

4. Purée in a blender or use an immersion blender to liquefy the sauce.

Makes 4 servings of about 3/4 cup of sauce each serving.

Additions such as pepper and chili flakes can be added at the table.

Each serving has about 50 calories and 10mg of sodium
