Dad’s Crepes

These crepes can be used as sweet or savory.

Ingredients

  • 3 eggs
  • 3/4 c. flour
  • 3/4 c. milk

Directions

Blend well with blender or stick blender

Heat a 9 inch or so frying pan til hot

Brush oil in bottom of pan, pour a small amount of batter in bottom and swirl around quickly. I use about 1/4 c. maybe less per crepe.

Cook them, stack them and keep making til all the batter gone. OR cook what you need and keep the batter for a day
or so to make more.

We like to eat these crepes filled with jam and fruit for breakfast.

For dinner we eat them with a filling of chicken or a tiny bit of ham combined with a cheese sauce and some asparagus or broccoli.

For dessert we eat them filled with strawberries, blueberries, raspberries or peaches, topping with a bit of smashed fruit and whipped cream.

Recipe makes about 8-9 crepes using an 8 or 9 inch fry pan.
