Crunchy Asian Mandarin Orange Spinach Salad

Ingredients:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp spoon sugar
  • 8 cups fresh baby spinach
  • 1/4 cup canned mandarin oranges, drained
  • 1/4 cup chow mein noodles (the lowest sodium you can find)
  • 2 tbsp roasted, unsalted peanuts
  • 2 green onions, sliced

Directions:

1. Wash spinach and spin dry to remove as much water as possible.

2. Place spinach in a large bowl, add the drained mandarin oranges and green onion slices.

3. In a small bowl or measuring cup mix together the olive oil, vinegar and sugar.

4. Pour the dressing over the spinach and mix well making sure all the leaves are coated.

5. Divide the salad into 4 bowls. Sprinkle each bowl with unsalted peanuts and chow mein noodles.

6. Serve immediately as this salad does not keep well.
