Creamy Garlic Chicken with Spinach and Tomatoes

Ingredients

  • 1.5 lbs boneless chicken breasts cut into bitesize pieces
  • 2 tbsps of olive oil
  • 1/2 cup heavy cream
  • 1/2 cup no salt added chicken broth
  • 6 cloves of minced garlic
  • 1 tsp Italian herb seasoning
  • 1 tsp onion powder
  • 1/3 cup fresh grated Parmesan cheese
  • 1 cup baby spinach
  • 1/2 chopped Roma tomatoes
  • 1/4 tsp red pepper flakes

Directions

1. Add olive oil to large skillet, add chicken pieces and cook until browned and juices run clear. Remove from skillet and set aside.

2. Deglaze pan with a splash of the chicken broth. Then add the garlic, onion powder, Italian seasoning, and red pepoer flakes. Cook for one minute, stirring well.

3. Next add rest of chicken stock, heavy cream, and parmesan and whisk over medium heat until it begins to thicken. Now add spinach and tomatoes and simmer on low until spinach is wilted, add back in chicken and simmer for 2 more minutes.

4. Serve over pasta of your choice. Sprinkle with a tbsp of shredded Parmesan cheese.
