Ingredients
- 3 1/2 ozs ( about 1 1/2 c.) Trader Joe’s High Fiber Cereal
- 1 1/4 c. milk
- 1 egg, beaten
- 1/3 c. oil
- 1 1/4 c. flour
- 1 T. no salt baking powder (Hain Brand- Featherweight)
- 1/2 c. sugar
- 1/2 c. dried cranberries, chopped
- 1/2 c. pecans, chopped
- 1 T. sugar (optional, for sprinkling on muffins before baking)
Directions
Mix and milk and let sit for 15 minutes, breaking up cereal clumps. Add egg and oil and mix well.
Measure all the other ingredients into bowl and mix, then add the cereal mix.
Spray or grease 12 muffin pan cups. Divide the batter evenly between the cups.
Sprinkle sugar on each muffin, optional.
Bake 400 degrees for 23-25 minutes
Makes 12 muffins, each muffin is 42mg sodium.
