Ingredients

In a slow cooker add:

  • 8 oz chicken, cooked and diced or shredded
  • 15 oz can no salt black beans, drained
  • 10 oz can no salt Rotel
  • 1 15 oz can no salt corn, drained
  • 1 onion, diced
  • 1 green or red pepper, diced
  • 28 oz can no salt plum tomatoes
  • 4 cups water
  • 4 t. Herb Ox no salt Chicken Bouillon
  • 12 t. cumin
  • 3/4 t. Diamond crystal Kosher Salt ( less sodium than others)
  • 3 corn tortillas, diced

Optional to add:

  • 1/2 t. Mrs Dash no salt Chipotle seasoning
  • diced jalapeno pepper

Optional for serving:

  • Fresh lime wedges, grated cheese, avocado, sour cream, cilantro

Directions

After the ingredients have been added to slow cooker, cook for 6-7 hours on low or 4 hours on high.

I suggest using the slow cooker bags so you have almost no clean-up.

This makes 14 cups

About 1091mg sodium in entire recipe without the optional items.
