Ingredients
- 1 lb boneless, skinless chicken breast ,cut into thin strips
- 1 tbsp canola oil
- 1 each medium green, sweet red and yellow peppers, cut into 1/4-inch strips
- 1 medium onion (5 oz), thinly sliced and separated into rings
- 1 garlic clove, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon pepper
- 1/4 teaspoon chili powder
- 1/2 cup minced fresh cilantro
- 1/4 cup lime juice
- 8 low sodium, homemade flour tortillas (6 inches), warmed (recipe in files)
Toppings:
- guacamole
- sour cream
- low sodium salsa
- shredded lettuce (optional)
Directions
1. In a large nonstick skillet, sauté chicken in oil for 2 minutes.
2. Add the peppers, onion, garlic, cumin, pepper and chili powder. Cook and stir for 5 minutes or until chicken is no longer pink and peppers are crisp-tender.
3. Stir in cilantro and lime juice; cook 1 minute longer.
4. Serve in low sodium flour tortillas with toppings as desired
