Ingredients:

  • 1 tbsp canola oil
  • 1 medium Vidalia onion, thinly sliced (abt 4 oz)
  • 1 medium green bell pepper, cut into thin strips
  • 1 lb lean ground chicken
  • 1 tbsp homemade no sodium fajita mix (on website)
  • 4 homemade hamburger buns (not added into values)
  • Assorted fajita toppings (not added into values)

Directions:

1. In a large non-stick skillet heat the oil over medium-high heat. When the oil is hot, add the onion and bell peppers. Cook for about 5 minutes or until tender-crisp, stir often. Set aside.

2. Place the ground chicken in a large mixing bowl, add the fajita mix and blend well. Divide the mixture into 4 equal portions and make patties.

3. Cook for about 5 minutes on each side or until the burgers are cooked through. (Barbecue, broil or cook on stovetop, if desired.)

4. Place each patty on a sliced hamburger bun and garnish with desired toppings. (salsa, sour cream, guacamole or sliced avocado, diced tomatoes, black olive slices)

Makes 4 patties, each patty has 231 calories, 86mg sodium, 4.7g carbohydrates. Values for the buns and toppings need to be added separately.
