Chicken-A-La-King-with-Jumbo-Pasta-Shells

Ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup green, red or orange bell pepper, chopped finely
  • 1/4 cup white onion, chopped finely
  • 1/4 cup flour
  • 1 clove garlic, minced
  • 4 oz mushrooms, sliced
  • 1 1/2 cups no salt added chicken broth
  • 1/2 cup heavy cream
  • 2 cups cooked chicken breast, shredded or cubed
  • Freshly ground black pepper
  • Jumbo pasta shells

Directions

1. Cook pasta, without salt, according to directions on package.

2. Melt butter in a large saucepan. Add bell pepper and onion and sauté until soft.

3. Add garlic and cook for a minute.

4. Add flour to mixture and cook until bubbly.

5. Add mushrooms and chicken broth and bring to a boil. Cook for 5 minutes or until thick.

6. Reduce heat. Stir in chicken and cream and season with pepper to taste.

7. Spoon into and on top of prepared jumbo pasta shells.

Serves 4
