Cheesy Spinach and Ham Topped Baked Potatoes

Ingredients:

  • 4 small Idaho potatoes, baked
  • 1 T. nsa butter
  • 1 T. flour
  • 1 c. milk
  • dash cayenne pepper
  • freshly ground black pepper
  • 1 c. fresh spinach, cooked, squeezed dry and chopped
  • 3 oz Tyson ham, slices, diced
  • 1 1/2 oz Kraft cheddar cheese, shredded
  • 1/2 oz swiss cheese, diced
  • 1 scallion, sliced thinly

Directions:

In a small saucepan, melt butter, add flour and cook until brown.

Add the milk, cayenne and black pepper and stir constantly.

When thick, add cooked spinach, cheese and ham. Heat well while stirring.

Cut open hot potatoes and divide the cheesy sauce evenly between them. Top with scallions.

Serves 4. 1125mg sodium total, 282mg per serving.
