Air Fryer Zucchini Boats
Air fryer zucchini boats are a great way to use the abundant amounts of zucchini that everyone seems to be growing in their gardens this summer!
Fresh zucchini is cut and stuffed with a super flavorful mixture of mozzarella cheese, panko bread crumbs, seasonings, sautéed onion and then air fried until tender and golden.
I recommend using small to medium zucchini for this recipe so that each zucchini is a single portion (although larger zucchini will work too, and you can just cut the larger squash in half).
One trick I learned long ago when removing the flesh from the center of the zucchini is to use a tea spoon. A teaspoon is a perfect size for scrapping the flesh out, leaving a nice well to put your ingredients in.
Another thing I learned along the way in my kitchen is to sauté the onions first and add them to the mix later. Sautéed onions add so much flavor to foods, I use them in many if not all of my recipes. For this recipe, you could skip this process and just add the onion while you sauté the zucchini flesh.
Simply melt some butter and add the onion, sauté until golden brown then add the zucchini flesh that was scooped out using the teaspoon method. This truly is a simple time-saving recipe that is packed with flavor.
I prefer to use fresh mozzarella but the packaged stuff will work also. I find that most fresh mozzarella tends to be lower in sodium that the packaged kind.
As soon as I remove the boats from the air fryer I like to top it off with fresh cut basil. (I grow basil year-round and use it often in my recipes.) That’s it, Enjoy!
