Ingredients:

  • 150g jicama, peeled, grated
  • 150g carrots, peeled, grated
  • 1 large egg
  • 1/2 tsp Mrs. Dash Fiesta Lime spice
  • 1/4 cup all-purpose flour
  • 1 tbsp canola oil
  • Sour cream (garnish – optional)…not added in to values
  • Green onions, sliced (garnish – optional)…not added in to values

Directions:

Place the coarsely grated carrot and jicama on a clean tea towel and wring out all the excess moisture. Continue squeezing until no more water is being released.

Place the dried carrot and jicama in a medium sized bowl and mix well. Add an egg and 1/2 tsp of Mrs. Dash Fiesta Lime spice to the mix. Add in the flour and mix again.

Place a large, non-stick skillet on the stove over medium high heat and add 1 tbsp of canola oil. Swirl it around the pan to make sure the entire bottom is coated.

Divide the carrot-jicama mixture into five equal portions and shape each portion into a patty. When the oil is hot, add two or three patties to the pan, without crowding. Cook for 4-5 minutes on one side, flip over, press down on patty with the spatula to flatten, and let the other side cook for about 4-5 minutes or until cooked and nicely browned. Repeat with the remaining patties.

When the patties are cooked, remove them from the skillet and place on a plate covered with paper toweling so that excess oil can be absorbed.

Serve immediately. Garnish with sour cream and thinly sliced green onions, if desired.

Makes 5 patties, each patty has 86 calories, 37mg sodium, 10.4g carbohydrates with ingredients used. Values for garnishes used will need to be added in.
