Caprese Skewers

Ingredients

  • 15 grape tomatoes -15mg
  • 15 lg spinach leaves-15mg
  • 15 Fresh mozzarella pearls, I get the BelGioioso, about 7.5mg. per “pearl”, 113 total
  • Put on toothpicks
  • Mix : 1/3 cup good olive oil
  • 3 tbsp good balsamic vinegar.
  • 1/8 tsp fresh cracked pepper
  • 1/4 tsp Weber Roasted Garlic And Herb. = 90mg.

Directions:

Pour over the skewers, turning them over a few times to coat.

I usually just pour the oil and vinegar over, coat, then sprinkle the pepper and Weber Garlic on top.

Works out to be about 15.5mg per skewer.

You can use fresh basil leaves also , but I love spinach, and figure the extra nutrition won’t hurt.
