Ingredients:

  • 1 lb low sodium homemade Italian pork sausage (recipe on website)
  • 1⁄2 cup onion, minced
  • 1 garlic clove, minced
  • 1 tbsp no sodium McCormick’s Perfect Pinch Italian seasoning
  • 2 cups fresh mushrooms, sliced
  • 2 cups frozen butternut squash or canned pumpkin
  • 4 cups no salt chicken broth
  • 1⁄2 cup half & half
  • 1⁄2 cup water (use only if soup is too thick)

Directions:

1. Brown sausage, drain, then add the onion, garlic, Italian seasoning and mushrooms and sauté until done.

2. Add pumpkin/butternut squash to this mixture and mix well.

3. Then stir in the broth and mix well.

4. Simmer 20-30 minutes.

5. Stir in the half & half and water (if needed) and simmer on low another 10-15 minutes.

6. Taste and add pepper as needed.

Makes 4 servings, each serving has 275 calories, 99mg sodium, 11.4g carbs
