Ingredients
- 8 oz homemade low sodium breakfast sausage, crumbled
- 3 oz homemade low sodium bread, cubed (about 3 slices)
- 1 cup shredded Trader Joe’s Swiss & Gruyere cheese
- 4 large eggs
- 1 cup 1% milk
- 1/2 tsp dry mustard powder
- 1/4 cup onions, chopped
- 1/4 cup mushrooms, diced
- 1/4 cup green & red peppers, diced
Directions
Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside. Layer bread cubes, sausage, and shredded cheese in a lightly greased baking dish.
In a bowl, beat together the eggs, milk and mustard.
Pour the egg mixture over the bread cube mixture.
Cover, and refrigerate at least 8 hours or overnight.
Remove the casserole from the refrigerator 30 minutes before baking.
Preheat oven to 350° F Bake 50 to 60 minutes in the preheated oven, or until a knife inserted in the center comes out clean.
Let stand 10 minutes before serving.
