Blueberry-Applesauce Mug Muffin

Ingredients

  • 1/4 cup oat flour (oatmeal ground up in a blender)
  • 1/2 tsp no sodium baking powder
  • 1 large egg
  • 2 tbsp unsweetened applesauce
  • 1/4 cup blueberries

Directions

Mix it all up in a bowl and dump into a sprayed mug…microwave for about 2 min or until the top no longer feels sticky…dump out on a cutting board and let it cool for about a minute…slice and add butter or anything you want….make any variety you want, I’ve probably made about a dozen variations.
