Ingredients

  • 1 1/2 lb chicken breasts, boneless and skinless
  • 1 cup no sodium breadcrumbs or no salt Panko
  • 1 tsp paprika
  • 1/2 tsp Italian herb seasoning, no salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Directions

1. Cut thighs or breasts into bite size pieces (about 40 pieces)

2. Place breadcrumbs into plastic bag and add seasoning.

3. Close bag tightly and shake until well blended.

4. Add a few chicken pieces at a time to crumb mixture. Shake to coat evenly.

5. Pre-heat oven to 400° F. Lightly grease a cooking sheet.

6. Place chicken pieces on cooking sheet so they are not touching.

7. Bake until golden brown, about 12-14 minutes.
