Almond French Toast

Ingredients

  • 3 servings
  • 1 egg
  • 1/2 c. milk
  • 1/2 t. almond extract
  • about 1/2 c. sliced almonds
  • 3 slices low sodium bread (I used the recipe from Dick Logue)
  • no salt butter for frying
  • maple syrup or powdered sugar for topping.

Directions

Mix egg, milk and extract in a bowl.

Place a single layer of almonds on a plate.

Dip bread in egg mixture, then into almonds. Place bread in hot pan with butter melted, almond side down. Sprinkle more almonds on top and press down with spatula.

Cook on med- med high, but watch carefully as the almonds get dark quickly.

Use syrup or powdered sugar to top each slice.
