Alfredo Pasta with Broccoli and Chicken

Ingredients:

  • 8 oz. grilled chicken,  cut into  thin slices and kept warm
  • 1 head broccoli, cut into florettes, steamed
  • 1 t. olive oil
  • 5 cloves roasted garlic, mashed
  • 9 oz.pasta of your choice, cooked in unsalted water according to directions, kept warm
  • 1 c. heavy cream
  • 2 1/4 ounces shredded Parmesan cheese
  • freshly ground pepper

Directions:

In a large pan, heat the oil on medium high heat, add the garlic and stir until fragrant. Pour the cream into the large pan and stir until a light boil occurs. Turn off burner.

Add the warm, well drained pasta and using tongs, mix together. Add the drained broccoli and mix well.

Now add the Parmesan and toss everything well.

Serve on plate and top with 1/4 of the chicken slices.

Add the freshly ground pepper on top and serve.

Makes 4 servings.

Might be served with a side salad.

This would be a lovely meal for guests.
