Air Fryer Ginger Pineapple Meatballs with Sweet and Sour Sauce

Meatballs:

  • 10 oz ground beef
  • 1/4 c. diced onion
  • 2 T. diced pineapple (from can listed below)
  • 1/2 t. ground ginger
  • 1/4 t. black pepper
  • 1 slice Nature’s Own Honey Wheat Life Bread (40 calorie),diced finely or crumbled into breadcrumbs
  • 1 egg

Directions:

In a medium bowl,mix ground beef, onion, pineapple ginger, pepper, bread and egg. Make sure to mix well, but gently, and incorporate everything.

Divide into 12 small meatballs. I form the mixture into a long roll and divide into 12 equal portions. Roll into balls about the size of golf balls.

Using your Air Fryer, spray basket with a bit of oil, and place the 12 meatballs in the basket. Turn on the air fryer and set the temperature at 190 degrees. Cook for 10 minutes. Gently remove and set aside.

Sweet and Sour Sauce:

  • 1 20 oz can Pineapple chunks in  juice, save juice
  • all the pineapple juice (from can above)
  • 3 oz sugar
  • 2 T. brown sugar
  • 1/3 c. cider vinegar
  • 1/4 c. water
  • 1/2 T. molasses
  • 1/4 c. water
  • 4 T. corn starch
  • 2 green peppers, cut in chunks
  • Pineapple from can, drained, suing the juice in the sauce

Directions:

***Optional- 2 green onions, very thinly sliced- for garnish

In a large saucepan, heat the following to a boil: pineapple juice, sugar, brown sugar, vinegar, 1/4 cup water and molasses.

Mix together the other 1/4 c. water and 4 T. cornstarch. Pour slowly into the boiling pineapple juice mixture and quickly mix with a wire whisk until the mixture thickens.

Reduce the heat to medium, and add the green peppers and pineapple chunks and cook for 3-4  minutes.

Now add the meatballs and stir gently, coating everything and cook for 5 minutes.
Serve.

These meatballs may be served as an appetizer or over rice as a main dish, as shown in photo.

Total sodium is 392mg. when made with these ingredients.

4 servings of 3 meatballs each.
