Ingredients
- 1 Zucchini
- 1 Yellow Squash
- 1/2 Sweet onion
- 1 t. garlic, diced
- Fresh pepper
- 10 Mini Heirloom tomatoes
- Fresh Basil leaves
- Oil
- Cooked rice
Directions
Cut zucchini and yellow squash in 1/4ths lengthwise, then cut in thick slices
Cut the onion in wedges about the size of the squash
Cut tomatoes in 1/2
Heat oil in fry pan, add squash, onion, garlic and pepper. Saute until starting to get light brown.
Take off heat and add the basil and tomatoes. Stir/
May be served as side dish or with rice for a main dish.
