Ingredients
- 12 oz (about 3/4 box) farfalle (bow tie pasta)
- 1/2 cup white wine (or use no/low sodium chicken broth)
- 1/2 cup low fat Greek yogurt
- 1/2 cup Trader Joe’s shredded Swiss & Gruyere cheese (or low sodium Mozzarella or Parmesan cheese)
- 1 cup frozen, chopped spinach (thawed)
- 1/2 tsp pepper
- 3-4 boneless chicken breasts, cooked and diced (about 1½ cups)
- 1/4 cup fresh basil shreds
- 1 cup pasta cooking water, reserved
- Juice of 1 lemon, extra Parmesan cheese (optional)
Directions
1. Boil pasta according to instructions without salt — minus 2 minutes.
2. Drain pasta in colander. Reserve 1 cup of pasta water.
3. Using the pasta pot combine wine (or broth), yogurt, cheese, spinach and pepper.
4. Heat for 1-2 minutes to reduce wine and melt cheese.
5. Add pasta to pot plus chicken and basil then stir, adding reserved pasta water as needed.
6. Continue to heat until all ingredients are heated through.
7. Serve immediately. Add freshly squeezed lemon or Parmesan cheese on top (optional).
