Prep Time 5 minutes         Cook Time 45 minutes             Total Time 50 minutes

Ingredients:

  • 2 1/2 lb beef roast (used trimmed eye of round)
  • 2 tbsp olive oil
  • 1 tsp rosemary or other herbs such as dill
  • 1/2 tsp garlic powder
  • 1/2 tsp freshly ground coarse black pepper

Directions:

1. Preheat air fryer to 360°F

2. Mix herbs and oil on a plate. Roll the roast in the mixture on the plate so that the entire surface of the beef is coated.

3. Place beef in air fryer basket. Set the timer for 45 minutes for medium rare beef, 50 minutes for medium.

4. Check the beef with a meat thermometer to see if it is done to your liking.

5. Cook for additional 5 minute intervals if you prefer it cooked more. Remember that the roast will continue to cook while it is resting.

6. Remove the roast from the air fryer and place on a plate, cover with aluminum foil and let rest for ten minutes before serving.

Makes 8 servings, each 5 oz portion (lean only) would have approximately 261 calories, 54mg sodium and 0.3g carbohydrates

What about.. putting air fryer on lowest temperature say 60C if it will go that low and lock the timer to on, if its a mechanical timer, then after searing the beef joint in a hot frying pan first, season as required, cook the beef for 20+ hours and for the last 20 minutes turn air fryer up to 180C to brown the outside surface.
    I have not tried that in an air fryer yet but plan to when I buy one in the near future if I can find space for it in my very small kitchen.
