Asian Style Chicken Legs with Lemon Glaze

Ingredients:

Marinade

  • 1/4 cup rice vinegar
  • 2 tbsp reduced sodium soy sauce (Chinatown)
  • 2 tbsp mirin (substitute 2 tbsp vinegar + 1 tsp sugar)
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp freshly grated ginger
  • 2 green onions, thinly sliced

1 1/2 lb chicken drums*
Zest of 1 lemon (1 tbsp)

Lemon Glaze

  • 1/4 cup rice vinegar
  • 1/4 cup freshly squeezed lemon juice
  • 3 tbsp sugar
  • 1 tbsp cornstarch

Directions:

1. Mix together the rice vinegar, soy sauce, mirin or substitute, sesame oil, garlic, ginger and green onions in a bowl. Pour this mixture into a large, resealable baggie.

2. Add the chicken pieces to the baggie, make sure all pieces are coated with the marinade. Place the baggie into a bowl (in case of leaks) and place the baggie in the refrigerator for at least an hour. Turn the baggie over a few times to ensure that all the chicken pieces are being marinated.

3. Pre-heat oven to 400°F.

4. Cover a baking sheet with aluminum foil and lightly mist with non-stick spray.

5. Remove the chicken from the marinade and discard the baggie with the used marinade. Place the chicken on the baking sheet and put in oven. Cook for 35-40 minutes or until the chicken is completely cooked through.

6. While the chicken is cooking make the glaze – Use a small saucepan and mix the rice vinegar, lemon juice, sugar, corn starch and 2 tablespoons of water in it. Place over medium low heat and bring to a boil. Stir, continue to simmer the glaze until it thickens. Add 3-4 drops yellow food coloring if you want your sauce to have a yellow color.

7. Serve the chicken with the glaze drizzled over it. Garnish with the lemon zest.

Makes 6 servings, each serving has 415 calories, 144mg sodium, 10.3 carbohydrates with ingredients used.

*Using boneless, skinless chicken breast will lower the amount of calories and sodium somewhat.
