Ingredients:

  • 1 lb boneless, skinless chicken breast, cut into thin strips
  • 1 tbsp canola oil
  • 1 each medium green, sweet red and yellow peppers, cut into 1/4-inch strips
  • 1 medium onion, thinly sliced into long strips
  • 1 garlic clove, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon pepper
  • 1/4 teaspoon chili powder
  • 1/2 cup minced fresh cilantro
  • 1/4 cup freshly squeezed lime juice
  • 8 low sodium, homemade flour tortillas (6 inches), warmed (recipe on website)
  • Toppings: guacamole, sour cream, low sodium salsa, shredded lettuce (optional)

Directions:

1. In a large nonstick skillet, sauté chicken in oil for 2 minutes.

2. Add the peppers, onion, garlic, cumin, pepper and chili powder. Cook and stir for about 5 minutes or until chicken is no longer pink and peppers are crisp-tender.

3. Stir in cilantro and lime juice; cook 1 minute longer.

4. Serve in low sodium flour tortillas with toppings as desired

Makes 4 servings of two tortillas each without toppings (530 calories, 115mg sodium)

  1. It has been 7 weeks since our family started our LOSO and low fat lifestyle. I am so grateful that I found the skip the salt web page when researching for recipes. That led me to this great group. Here is one of our favorite recipes, Chicken Fajitas with corn tortillas, not cheese, sour cream or guacamole needed, there is so much flavor with all the different kinds of peppers, onion and garlic. I actually enjoy eating this way with so many fresh vegetables and fruits plus my blood pressure has gone down and I have lost weight.
